Breakfast Taquitos
Ingredients
- 6 large eggs
- Salt and pepper, to taste
- 1 tablespoon olive oil
- ½ pound ground sausage or 12 breakfast sausage links
- 1 cup shredded cheddar cheese
- 12 small flour tortillas
- Optional garnishes: chopped cilantro, diced tomatoes, chopped onion
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Scramble the Eggs: Beat the eggs with salt and pepper. Heat olive oil in a skillet over medium heat. Add the eggs and scramble until just set. Remove from heat.
- Assemble the Taquitos: Lay out the tortillas on a flat surface. Divide the scrambled eggs and sausage among the tortillas. Sprinkle with cheese. Roll up tightly and place seam-side down on the prepared baking sheet.
- Bake: Brush the tops of the taquitos with a little oil. Bake for 10-15 minutes, or until the tortillas are crispy and golden.
- Serve: Serve hot with your choice of garnishes and sides
Notes
For an extra crispy exterior, broil the taquitos for the last 2-3 minutes of baking.
